Merry Christmas all!
Christmas in the Bailey household, is about one bird and one bird alone: turkey.
And most importantly, making what can be a bland tasteless bird, as incredible as possible.
Our souped up Christmas dinner includes a turkey stuffing roll (a la Tom Kerridge), goose fat roasties, parsnips, carrots, sprout tops, chipolatas wrapped in bacon, cranberry and bread sauce. PHEW! I’m surprised I can even type after eating all that.
Our wine switched between the Bouchard Pere & Fils Genevrieres, Meursault Premier Cru and the Calera Pinot Noir. Whilst I expected the Pinot to work best, the Meursault trumped it.
Mince pies & Christmas pudding drowned in brandy sauce still to come…
