Anyone for Jenga?

Today is going to consist of lots of packing, cleaning and scheduling posts for you lovely people.
But first here’s the next letter in the A to Z.


S for Structure.

The structure is such a crucial part of a wine, but something rarely given much thought by consumers.

Think of it like the skeleton of a wine; it’s the bones that holds the wine together, and then the fruit & flavour hangs off it.

It comprises of acidity, tannin, body and alcohol. Essential you want a balance between all of these aspects. It’s like Jenga – one element out of place and the wine can become unbalanced.

So not only is it important to hold everything together, but these things are your main considerations when pairing food and wine together too. Old world wines are usually designed to pair with food so they really carefully consider and prize good structure in a wine. While in the New World countries the structure is still important, but it’s much more of a secondary factor to what they really care about: flavour. Specifically fruit flavour.

  1. Very much agree that structure is crucial for pairing wine with food.
    In my opinion, new world wines, especislly from California, are too fruity and often lack structure.

    Looking forward to that old world / new world wine post!

    • Coming soon! I have just got back from hols so have a huge pile of washing to get through before any more blogging can be done…

      I would tend to agree that wines from Cali can be too fruity to be paired with food, but then I guess that’s not really their purpose – they just want to appeal to those easy-drinking wine to be enjoyed alone I guess!
